Our story

Apostolos Valleras has spent over 20 years navigating the dynamic culinary and wine worlds of Brooklyn and Paris, where he has immersed himself in two of the most influential restaurant scenes. In New York, during the height of the artisanal movement, he eagerly pursued knowledge about craft, handmade, and locally sourced products. In Paris, he experienced the French dedication to gastronomy and “art de vivre,” discovering a world where natural wines hold a revered place within an anti-conformist culture that emphasizes humane, transparent, and responsible production.

His career has brought him close to a new wave of ecologically conscious wine producers across Europe, embracing low-intervention methods. With a growing portfolio of Greek artisan winemakers focusing on indigenous varieties, Apostolos aims to elevate Greece’s wines in Paris, the wine capital of the world. He envisions Greek wines, rich in unique terroirs and ancient grape varieties, earning a deserved place in the French market alongside other Old World wines.

In Fall 2023, Apostolos launched a distribution network across Paris’s bars, restaurants, and independent wine shops. Through APOS WINE he is committed to contributing to the sustainable, terroir-driven wine movement, fostering authentic connections between Greek and European artisan winemakers.

The wine industry has seen a shift. People are increasingly disillusioned with industrialized, generic wines bought from large supermarkets.
The trend is moving towards "boire moins mais mieux"—drink less, but better. Wine is one of life’s small pleasures, and it deserves to be savored and appreciated.

These wines, crafted by a new generation of vignerons, harness the potential of Greece’s rich wine heritage and unique terroirs. Our vignerons work ethically, avoiding synthetic chemicals and additives, ushering Greek wine into a new era of purity and excellence.
